Chinese Paper-Wrapped Chicken

It doesn't require any special culinary skills to make this popular banquet dish.

paper wrapped chicken

The Spruce Eats / Christine Ma

If you've ever attended a Chinese banquet, you may have been intrigued when a mysterious looking transparent packet was served. Upon opening it, you would have discovered a highly seasoned combination of deep-fried chicken and Chinese vegetables. Paper-wrapped chicken is a popular Cantonese dish that is now enjoyed throughout China. Of course, the food isn't actually wrapped in plain white bond paper - cellophane paper is normally used, although rice paper may be substituted. Aluminum foil works as well, truly making it a mystery dish since your guests can't see through the packet. Foil-wrapped chicken is sometimes called "silver-wrapped" or "gift-wrapped" instead of paper-wrapped chicken, but it is basically the same recipe. Another variation is to substitute beef or spareribs for the chicken.

The Marinade

The secret of this popular dish lies in the marinade. Once the wrapped chicken pieces are deep-fried, the marinade caramelizes onto the chicken and other ingredients, joining them together. Hoisin sauce is often added to the marinade; oyster sauce is also used. Two other popular marinade ingredients are sesame oil and five-spice powder . When wrapping the chicken, it is customary to add a few other ingredients as a type of garnish. Cilantro, Chinese dried mushrooms, Chinese sausages (you can substitute smoked ham), and/or green onions are all used.

Wrapping the Chicken

When it comes time to cook, the garnish and chicken pieces are wrapped envelope style in square packets and deep-fried. The envelopes should be deep-fried in batches of five to six at a time so as not to overcrowd the wok. Cooking time is normally about three to four minutes - long enough for the chicken to cook through but not for the paper to blacken. (This is for five to six-inch squares - the cooking time will be longer if you are working with a recipe that calls for larger packets.) Stir the pieces lightly with chopsticks a few times while deep-frying. Drain the cooked chicken packets on paper towels. While paper wrapped chicken is normally deep-fried, it can also be baked. Bake in a preheated 350 F/180 C oven for 15 minutes. Cool slightly before serving. To serve, pile the packages on a serving dish and surround with greens for garnish if desired. One final note: be sure to keep lots of napkins handy! Eating paper-wrapped chicken can be a rather messy business - you can use chopsticks to open the bundles, but most people just use their fingers.

Paper-Wrapped Chicken Recipe

(Serves 24 chicken packages)

Directions:

New to deep-frying? Learn how to deep-fry food safely before beginning.

Gather the ingredients.

Cut the chicken into thin slices roughly 2 1/2 inches long (to make 48 slices). Pound lightly on the back of the chicken to tenderize.

Mix together the marinade ingredients and marinate the chicken for one hour.

After the chicken has been marinating for 45 minutes, add the mushrooms and green onions. This allows them to absorb the marinade for a few moments while you begin wrapping.

Paper-wrapped chicken is normally wrapped envelope style. Take a square of paper and lay it out in front of you. Add 2 of the chicken slices, 1 slice of mushroom, 2 slices of green onion and a coriander sprig (if desired) in the middle, being sure to keep the filling in the center and not near the edges. Bring the bottom flap up over the chicken. Fold the right side over toward the middle, then the left side, so that one is overlapping the other. Fold the top flap down, tucking it inside the opening to seal the package. It is very important to make sure the packets are well sealed so that no oil seeps in.

Heat wok and add oil for deep-frying. When the oil is ready, slide the packages in, about 6 at a time so as not to overcrowd the wok. Deep-fry the packets, stirring occasionally, until the chicken is cooked through. Drain on paper towels. Continue deep-frying the rest of the packets.

Serve the chicken packets on a large platter, garnished with greens if desired. Guests can open the packets with either chopsticks or their fingers.

I made this for my grandson using a chopstick and wrapping paper. He played with it all day, despite having more expensive toys around. Sometimes children show you the real meaning of life.

Thank you for reviewing and commenting. I am glad he had fun and kept him entertained. Simple games are good. Not too many rules to learn, freedom to change how you play, a break from thinking - even monotonous games have a place.

The Paper Yo-Yo is our Only Shot at Making Kids Great Again

One of my buddies just got back from a month-long trip around Asia, and in addition to the 15 packs of extra potent Chinese cigarettes he returned with, he also brought back something I’d never seen before: a paper yoyo. If you’re like me and you’ve never heard of a paper yoyo before, I highly recommend you get learned on what could be the children’s toy that saves all of humanity. Paper yoyos are a basic toy: just some paper tightly wrapped around a six inch stick. They’re simple, but they’re seriously the most entertaining toy I’ve ever played with.

Paper yoyos are a lot like Indiana Jones’s whip or a magic wand that can only perform the “expelliarmus” spell (yeah, I read all seven Harry Potter books, fuck with me). With a flick of the wrist, the paper yoyo shoots out anywhere from two to five feet depending on how hard you flick, and then recoils on itself. When I first started playing with it, I literally just walked around my house for two hours knocking shit out of people’s hands from five feet away. If that doesn’t sound like the definition of a fun time to you, I don’t know what does. And on top of that, with all the wrist flicking you end up doing, you have a pretty good excuse to go around listening to that “Flicka Da Wrist” song on repeat all day — something that’s sure to annoy your roommates if knocking full beers out of their hand didn’t already do the trick.

Just look at these kids here.

Sorry for making you endure those little fucktards, but try to tell me these kids look like they’re not having a good time. It’s seriously the perfect toy for children. They can entertain themselves alone for hours at a time, and when they get bored they can go and whack the shit out of each other with it. It sucks that I didn’t have one of these when I was a kid, but I just might buy one online and use it to mess with my brothers when I head back home next month.

Apparently these things have existed forever, but with the rise of electronic toys since the early 2000’s, they’ve been all forgotten about. This toy absolutely needs to make a come back. Not to sound like a typical old head here, but kids these days are getting too fucking soft. When I was a kid, a toy wasn’t fun if it couldn’t annoy or inflict pain on somebody else. We used to play with bb guns, plastic swords, slingshots, knives — you name it. If you could hurt that piece of shit 8 year old across the street with it, it was a cool toy.

Nowadays we’ve got spoiled brats that sit around with their faces glued to iPhones and fidget spinners all day. These kids are completely sheltered from the real world, which is only bound to create the kind of adults that need safe spaces and security blankets in the future. If this trend continues, we’re gonna have a serious problem on our hands when these pampered pussies grow up and try to lead our societies.

The way I see it, the paper yoyo is our only chance at saving humanity. The government needs to intervene and start pumping paper yoyos, bb guns, and slingshots into elementary schools again. It might be tough to compete with the iPhone, Xbox One, PS4, and the juggernaut of fidget spinners, but the paper yoyo is our only shot at making kids tough again. We need kids playing and fighting and, dare I say, bullying each other, because that’s how the real world works.

I don’t know if we’ll ever be able to fully stop the pussification of our species, but at the very least we need to try. If I and all my 20-something year old roommates can be entertained by a piece of paper and a stick, I bet any snot-nosed kid can be too. Paper YoYos to the moon baby!!

WAY BETTER THAN A FIDGET SPINNER

The Gidget Widget stress and anxiety relief gadget picks up where fidget spinners left off. It’s a handsome plastic cube, about an 1-1/4" per side, with calming colored buttons and dials for your fidgeting pleasure. This is the model with all new fidget functions, including dial, scroll, slide, click, flip and jump. Sounds like a junior high on a Friday afternoon, but it’s all at your fingertips anytime you need or want it. Ages 6+.

Spin the ribbed 7" handle of this hand-powered prop between your palms, and watch it take off. (If it lands instead of flying off into the wild blue yonder, reverse the spin!) Neon handle, bright, metallic-flaked 8" propeller, and a lift so high we imprinted it with our logo - the airborne Jarvis. It's all plastic, and won't decapitate anyone, but it's still for 10-year-olds and up.

Original Slinky

Does anyone need to be told what a Slinky(tm) toy is?? Okay, it is a very slack spring, 2-7/8" dia x 2-1/2" long, compressed. It will stretch out to about 5 or 6 feet long without deforming. That's the boring part. The interesting part is that it "follows" itself. Slosh it from hand to hand. Put in on the top step of stairs, flip the end down a step, and watch it walk down stairs, or down an incline. Believe us, no childhood (or adulthood) is complete without an original steel Slinky(tm). It was hard for us to find it, but we are glad we did. You should be too.

T-t-t-t-toothy Fun

THE American classic novelty item (even ahead of the whoopee cushion and rubber vomit, we think) is a set of chattering choppers. Auto-dentures. Invented by Eddy Goldfarb in 1949, a man who made the Toy Industry Hall of Fame ahead of Milton Bradley, these are, not to put too fine a point on it, the sine qua non of gagdom, the ne plus ultra of spring-driven frivolity. Ours are 2-1/2" dia, with a wind-up key.

Look Ma! No Tangles!

Introducing the Aeromax 2000. This update of the classic parachute toy has mesh under the canopy instead of lines, so it's tangle-free. Big 20" chute floats the little 3-1/2" tall trooper gently to the ground. In assorted colors, which we'll pick because we have really good color sense.

From France comes this fun mechanical plastic bird that really flies by flapping its wings. It is about 8" long and has a wingspan of 16" tip to tip. Snap the wings in place, wind up the rubberband drive and toss it gently into the air on its maiden flight. It flies up to fifty yards with a satisfying fluttering sound.

Just like our famous cow popper, but this guy is a 5-1/4” tall rubber axolotl with a mouth big enough to take a 1-1/8” dia foam ball and spit it 20 feet when you squeeze it, as you will want to do. And if you’re axolotl-ignorant, they’re neotenic salamanders, the world’s cutest amphibians, and they also answer to “Mexican walking fish.” Ours come with (6) foam balls for your axolotl-squeezing convenience. For ages 4+.

the Nobel Pigeon

It's real name is the Rock Dove, and it ought to be the national bird. Doesn't fly south for the winter like those wimpy geese, never swoops out of the sky to eat unsuspecting bunnies like bald eagles, just minds its own business and eats whatever you drop on the El station platform. It's not even bald. This hard vinyl version is gray with a rosy breast, and it measures 5” beak to tail. Wind it up and watch it bounce and bob around. Take it home, and it's a homing pigeon.
